Rocky Top Catering is seeking a talented, hands-on Sous Chef to support our UNC operation, which includes Training Table service for student-athletes and on-campus catering (game days, special events, and premium venues). Responsibilities

• Assist the Executive Chef with daily production for Training Table meals and campus catering, ensuring quality, consistency, and on-time execution.
• Lead prep, station setup, batch cooking, service, and pack-outs; jump on the line wherever needed.
• Uphold nutrition and portion guidelines for Training Table; execute cycle menus and specials with precision.
• Supervise, train, and coach kitchen staff (full-time and event/seasonal), fostering a positive, high-standards culture.
• Manage receiving, storage, inventory, and ordering; support food and labor cost control.
• Maintain excellent food safety and sanitation (temps, labeling, HACCP logs, cleaning schedules).
• Coordinate with culinary leadership, FOH/event teams, and (as needed) the nutrition team to deliver seamless service.
• Support event execution on game days and special events, including set-up, service, and breakdown.
• Help maintain equipment and an organized, safe kitchen.

Qualifications

• 2+ years as a Sous Chef or strong Lead Cook in high-volume environments; catering/banquet or collegiate/contract dining experience preferred.
• Proven leadership and team-building skills; calm under pressure and solutions-oriented.
• Strong organization, time management, and communication.
• Solid knowledge of food safety and sanitation; ServSafe Manager (or ability to obtain within 30 days).
• Comfortable with long shifts on your feet and lifting up to 50 lbs.
• Flexibility to work early mornings, nights, weekends, and game days per the athletics and event calendar.
• Familiarity with basic nutrition/athlete fueling guidelines is a plus.
